Recipe: Rhubarb Summer Salad

My father called my the other day and told my that the rhubars in my parent’s garden have started to come up and asked if I would like some. So when they visited this weekend they brought a bundle. I really love rhubarbs and had to make something of them right away. So we made this salad for lunch filled with lots of Summerish ingredients and served with a sweet lemon dressing. We used puy lenses as the body of this salad as they retain their texture when cooked.

Rhubarb Summer Salad
(makes 4 serves)


The salad
2,5 dl puy lenses
2 stalks rhubarbs (marinated in 1 tsp maple syrup)
15 strawberries
20 cherry tomatoes
15 basil leaves
100 g fresh goat cheese

Lemon dressing
1 tbsp maple syrup
1 tbsp lemon juice
1 tbsp olive oil

How to make
Start by slicing the rhubarbs very fine and marinate in 1 tsp maple syrup for 30 minutes. Make the dressing by whisking all the ingredients until combined. Cook the puy lenses. Wait until they are cooled down and mix with all the ingredients except the goat cheese and basil leaves. Combine the salad with the dressing and serve with goat cheese and basil leaves on the top.
